Fundamentals of Dietary Systems Management

Developed within the Department of Dietetics and Nutrition, this badge recognizes knowledge of the Foodservice System Model (FSM) for food procurement, production, distribution, and service in institutional foodservice settings. Learners will recognize the FSM, identify kitchen designs for efficient food product flow, understand procurement foodservice system processes, food production, distribution, and service; and describe components of the safety, sanitation, and maintenance subsystems.
