This person has successfully demonstrated all of the knowledge and practical competencies required to achieve the Skills Proficiency Certificate in Basic Food Preparation.

They can maintain safe working conditions, adopt safe procedures for themselves and others, prepare equipment and commodities for use and cook food using basic techniques. They can maintain clean working areas and equipment and apply good housekeeping practices. They can select appropriate commodities and equipment for specific tasks whilst ensuring hygiene standards. They are able to complete tasks efficiently and carry out simple comparisons between fresh and convenience commodities.

They can follow procedures to select, prepare and cook food items by boiling, steaming, stewing and roasting and can prepare and cook basic sauces and soups. They can store and care for materials correctly and have an awareness of commodity rotation in accordance with procedures. They also have an understanding of common illness causing pathogens and have a knowledge of basic first aid procedures.
