Earning Criteria

Earners complete a self guided and instructor facilitated course of study on basic cooking methods, basic baking mixing methods, food and kitchen safety, baking principles, and culinary weights and measures

Earners complete a virtual practical exam where they must research a formula for a bakery item, prepare and present that item and engage in a self critique of that item.

Earners complete a 10 hour practical exam where they must produce 6 portions of a plated dessert including a main item, frozen item, sauce, and two garnishes. Earners also pass written examinations on baking principles, weights and measures, and food and kitchen safety
Standards
The Culinary Institute of America is accredited by the International Association for Continuing Education and Training (IACET) and is authorized to issue the IACET CEU.
