Earners complete a self guided and instructor facilitated course of study on basic cooking methods, basic baking mixing methods, food and kitchen safety, baking principles, and culinary weights and measures

Earners complete a 10 hour practical exam where they must produce lean dough finished in three different applications including two featuring moist and dry heat examples of garnishes or inclusions; creaming method cookies, rub-in method biscuits or scones, foaming method genoise, and boiled custard pastry cream. Earners also pass written examinations on baking principles, weights and measures, and food and kitchen safety
